Portobello Mushroom Burgers (serves 2)
2 portobello mushrooms
1/8 cup balsamic vinegar
1 tablespoon olive oil
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 tablespoon minced garlic
Place mushroom caps, smooth side up, in a shallow dish. Whisk vinegar, oil, basil, oregano, garlic, salt and pepper together in small bowl.
Pour over mushrooms.
Let stand at room temperature for 20 minutes, turning twice.
Preheat broiler to medium heat.
Place mushrooms on broiler. Reserve marinade for basting. Grill for 5 minutes on each side, or until tender. Brush with marinade frequently.
Top with onion, tomato and garlic aioli. Serve immediately!
