Asparagus with Walnuts, Parmesan and Brown Butter

Asparagus are a vegetable you eat all at once. It doesn’t matter if you’re serving one, two or an army of 10, they are a stalk born and grazed to understand the mantra, “one is the loneliest number.” Members of the clean plate club can vouch for this claim.

Because asparagus are such a fresh vegetable it’s almost impossible to get them wrong. This recipe from the New York Times, however, is just one example on how to get them wonderfully right–and makes attendance at any lonely hearts club nearly insane.

Portobello Mushroom Burger

If a frog wore a hat it would probably be floppy, due to long days in the sun and the necessity for shade by the pool. Portobello mushrooms would be the obvious choice.

Their long diameter, and easy woodland access, provide perfectly for sun-savvy frogs.

This summer no one, reptilian or otherwise, wants wrinkles of alligator proportions. Stay classy with the sun fighting vitamins mushrooms provide.

Portobello Mushroom Burgers (serves 2)
2 portobello mushrooms
1/8 cup balsamic vinegar
1 tablespoon olive oil
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 tablespoon minced garlic
Salt
Pepper

Place mushroom caps, smooth side up, in a shallow dish. Whisk vinegar, oil, basil, oregano, garlic, salt and pepper together in small bowl.
Pour over mushrooms.

Let stand at room temperature for 20 minutes, turning twice.

Preheat broiler to medium heat.
Place mushrooms on broiler. Reserve marinade for basting. Grill for 5 minutes on each side, or until tender. Brush with marinade frequently.

Top with onion, tomato and garlic aioli. Serve immediately!
